Sorbic Acid

Sorbic acid is the most commonly used traditional food preservative. It has many advantages over propionic or benzoic acid. It does not impair the final product’s flavour. Sorbic acid is needed in small quantities by weight in comparison to other preservatives. Sorbic acid, as well as its salts, function best in products with pH between 4.0 and 7.0.
